Copan Tex-Mex Coming to Downtown Herndon

More restaurants and businesses opening in downtown Herndon.

It's official — the former So Addictive Lounge and Grill in downtown Herndon will reopen as a restaurant featuring Tex-Mex style food. 

Copan will serve Salvadorean and Honduran food. Work has been going on inside the space for some time, but a brightly colored banner was added recently. 

It joins the other new business activity in Herndon recently, including:

• Mellow Mushroom is opening in the old Fuddruckers space
• Fresh World will open soon in the old Bloom location on Elden Street
• Green Lizard Cycling will offer a cycling and espresso shop downtown this spring
• Zinga frozen yogurt opened in November in the Franklin Farm Shopping Center 

Patch will provide an update when we hear more about opening dates for these businesses and more.

It all depends on the amount of work, renovations and permits they have to go through, and permits can really slow things up sometimes. Additionally, often businesses have soft openings weeks before they have a grand opening so they can work out kinks and get employees trained. I don't have a date for Mellow Mushroom, Fresh World says "coming in 2013" but I'm thinking it'll probably be late winter-ish. Based on the permits, Copan could be open as soon as early 2013, but they also don't have a set date yet.

I also agree with the comments about Tex-Mex not "matching" Honduran and Salvadoran food *but* the restaurant is/will literally be right across the street from our office which is super convenient. I will absolutely give it a chance, too :)

I wish they would just call it salvadoran/honduran, if that's what it is. I would prefer tex-mex because we already have lots of the other cuisines, but salvadoran and honduran food is very good. I just miss the Tortilla Factory!

Copan really does Tex-mex and it's very good. I recommend it.

We ate at a Mellow Mushroom on the road (Florence SC) and it was outstanding: great pizza and salads, awesome beer list. I'm hoping the Herndon location will be good. Their website says that they are now hiring, so it sounds like a July opening. No dates posted anywhere. There is a Mellow Mushroom downtown DC (Adams Morgan), but parking in that neighborhood is tough and Metro access also inconvenient. So that location is not very appealing to suburbanites.
