Coming Soon: Tavern 64 Regional Kitchen

New restaurant located at Hyatt Regency Reston will bring craft cocktails and classic American dishes.

In: Locally sourced ingredients, craft cocktails and an open flow between the lounge and the restaurant.

Out: Your standard upscale hotel restaurant.

The Hyatt Regency Reston is making way for a new concept, Tavern 64 Regional Kitchen, which is slated to open in June.

The name "Tavern 64" pays homage to Reston's history as 1964 was the year Reston's first residents moved here. Hyatt executives said they met with Reston founder Robert E. Simon when narrowing down the name.

Tavern 64 replaces which was part of the hotel for more than two decades. Market Street did fine, says Ray Messina, the Hyatt's director of sales and marketing. But with increasing competition and the growth of Reston Town Center, it was time to shake things up.

Things have been shaken up indeed. Market Street recently closed and the space has been stripped completely. The interior makeover will include organic materials, natural wood and handpainted pottery. There will a larger bar,  individual tables as well as some communal tables, and the lounge will flow into the restaurant.

"We wanted to make it look like a living room," says Ross Virando, the Hyatt's Food and Beverage Director. "We want to be an upscale tavern that is a gathering place."

Virando says he envisions the 168-seat new space (and its 48-seat patio) as a gathering spot for Restonians as well as hotel guests.

The menu is starting from scratch as well. Among the main features, according to Virando:

* All regional as much possible. Sustainable fish from the Chesapeake Bay and grass-fed beef from Pennsylvania, as well as produce and dairy from smaller farms and creameries.

* Food that gives a nod to American and Southern favorites. "Nothing complicated," says Virando. "These will be very approachable dishes."

* Expected price points: moderate (about $12 for lunch entrees; $20 and up for dinner entrees)

* Local draft beers and "classic American and craft can selections," as well as wines from boutique wineries. All wines will be available by the glass.

* Craft cocktails that also hearken back to the classics.  Some of the drinks will feature spirits from Bowman Distillery, which was originally located in Reston but now is in Fredericksburg.

"This is going to be a beverage-forward place," says Virando. "This could be the best bar in the region."
